About three weeks before the harvest, the bushes are covered with mats. In the shade, the leaves build up more theanine and fewer catechins, which are what make tea bitter. The result is the strongest umami of all Japanese loose-leaf teas.
Gyokuro is brewed differently from sencha: lots of leaves, little water, a low temperature. The first cup is small and dense, and each one after it is lighter. After four infusions you can eat the leaves with a drop of soy sauce.
In the pack
50 g resealable bag, a brewing card with a QR code to a video, and a 5 g sample of another tea matched to your order.
