Fukamushi means “deep-steamed”. The leaves are steamed about twice as long as for regular sencha, so they partly break up and give a thick, cloudy, deep green infusion. The first harvest (ichibancha) is the youngest spring leaves, with the most amino acids, which are responsible for sweetness and umami.

Brew it briefly and at a lower temperature. For the second infusion, 10–15 seconds is enough.
